1. The lore
It doesn't get much better than Middle Earth. The world has a much more authentic feeling than many other MMO's, and the world/lore make roleplaying very easy to get into.
2. Fellowship Maneuvers
FM's are an interesting mechanic that rewards group coordination and gives a little leeway for groups that don't have a proper mix of class roles (healing, dps, power restore, etc).
3. Fluff
LOTRO has a lot of really cool fluff in it. Music system, housing, trophies, cosmetic inventory system, fishing, and other hobbies that are to come.
And finally one of the best things about LOTRO is that you know the best is yet to come. All of the most interesting areas are coming down the pipeline, so the potential for LOTRO is just through the roof. Moria, Rohan, Fangor, Isengard, Mirkwood, Lakewood, The Lonely Mountain, Gondor, and Mordor... so many amazing areas that are yet to come.
I felt this this deserved a bump for the OP. If anything, #3 is the most important aspect keeping me playing LotRO over any of the other MMO's. Once you get to max level in any MMO, what is left to do? You're either waiting for new content, you're PVPing, or you're getting burnt out raiding every night.
In LotRO, there are some other options. Those options might not be very extensive at this point in time, but being able to decorate your own house, write your own music, and create outfits for yourself is a good start.
I've spent a lot of my "down time between patches," playing music, or listening to other folks play music. There's probably someone here that would say, "if I want to listen to music, I'll play my MP3's." Well, that's fine. But I guarantee you that you don't have MP3's of some of the original content being played in LotRO at this point. Perhaps you don't care, but Turbine had the wisdom to include the feature for the folks that want it.
The LotRO housing system is a bit weak in my opinion, but it's there. To my knowledge, EQ and WoW do not have any such system in place. AoC has such a system, and in 6 months, AoC might be worth playing. LotRO is worth playing now.
Lastly, there's one other thing that sets LotRO apart from other games... $200 for a lifetime subscription. If you get bored of playing the game after a few months, come back a year from now after a few free content updates and play for a few months. Get bored and come back a year later. The lifetime subscription is a great idea, and I haven't seen anyone else offer it yet.
Aside from questing, what do you spend most of your time doing in-game?
