The professions in WAR aren't just random, they are taken from the tabletop game which has 25 years of development history.

You might want to go back over your MMO history a bit. It was in fact 989 Studios that was developing Everquest when it released, I still have my disk if you want me to provide a picture to prove it. It wasn't Verant until after a couple expansions had released.
EA also has had a pair of MMO failures in recent years. A game called Earth and Beyond was EA developed. It had the plug pulled on it. More recently, The Sims Online will have the plug pulled on it at the end of this month. I doubt that is why EA is letting Mythic return to Mythic Entertainment. I'd bet it has more to do with the repuation that EA has among gamers. How many people refuse to try a game if it has the SOE logo attached to it? Well...EA is the same. Between E&B, TSO, UO and a number of the changes made to DAoC after EA acquired Mythic, EA is quickly getting the same reputation that SOE has.

What I find absolutely hilarious about the removal of 2 of the classes is the fact they were two of the earliest classes announced and fleshed out. The Choppa and Hammerer were some of the earliest announced classes and after years of development time, they can't get the classes right? Does that not also amuse anyone else?
I was a huge supporter of WAR and Mythic, just check my post history. I loved DAoC in the early days, it was some of the most fun my entire guild has ever had. But at Leipzig last year when they started announcing the Elven pairings I started to lose interest in the game. Between the tier setup and the profession selections, it just didn't have the same appeal it did for a year prior. This latest announcement just removed even more of my desire to play. I don't care quite as much about the class removal but the complete change in how end game RvR will work has me very disillusioned with the game right now. I'm planning to play in Open Beta if I get an invite just so I can see how this stuff will all function but as it stands right now, I as well as others from my guild will be passing on WAR.
Correcting incorrect information is the main point. Here's why. There are a large number of guilds that like to form based on having certain criteria. Now, those guilds that wanted to form as only Dark Elf or Empire can't truly do that anymore as they have lost their tanks. It's just the removal of options.

A bit more research on your part might be a good idea.
2 of the 4 professions removed are in fact tanks.
Empire - Knights of the Blazing Sun
Dark Elf - Blackguard
That leaves those 2 races without tanks.
Aside from questing, what do you spend most of your time doing in-game?
