Sure it might SEEM really easy for you to go in and adjust the UI to include AA, however since I'm guessing no one whos complaining about it is even remotely close to being a programmer... Lets just say that its not that easy.

I think the issue is that they do not want the mainstream to be able to "easily" turn it on because they believe it is unfinished or un-optimized.

At 8x the the game falls at 35-40 fps in some areas with my cards working only at 50-60%.

That needs a lot of optimization i think.

The game needs shadows optimizations because they look jaggie and higher textures.

High textures option is the same as medium no change which seems it is bugged or not implemented.

In conclusion if they add ultra high res textures and fix the shadows and some other things enabling 8x will make this game a spectacular visual art.
