Can I go from 90 entertainer to a 90 combat character like a BH when I get the respec NPC?

Nope


If you're a preNGE vet and have a respec tool, I think they changed this so you could take your level with you.  It may be that it's restricted in a way that you can go combat-noncombat-combat and not lose levels.

But I've never tried it myself, and I've never used a respec NPC.

So Viza rules on this one...

CH, Jedi, Commando, Smuggler, BH, Scout, Doctor, Chef, BE...yeah, lots of SWG time invested.

Here's a better question: can you take a fantastic game, turn it into the laughingstock of the mmo community, and then turn it back into a great game? I think we all know the answer there...
