I downloaded AO because I heard that it had an FPS interface, but it seems that there is no mouse-look?  I think I read something about holding down another key to be able to look around, but I assume that you can't change some setting so that you always have mouse-look on?

Right click and hold then move your pointer right or left. If you want to be able to mouse look in any direction hold the ctrl button down as well. You can also use the number pad keys to change where the camera is pointing in an orbit around your character.
