Imnot sure what you are saying here. Of course everyone can pick up crafting. Why wouldnt they?

Not sure how its gonna work in DF UW but in DF 1 crafting/gathering affected your skills. For example, if you mined a rock your strength skill would increase. Crafters were the first to get max stats on those skills.

Also Crafting directly affects PvP. Since all gear,weapons,enchants, siege equipement etc. are craftable. Dedicated crafters with maxed out skills can make the best of those.
