I was playing in pheonix and it is super populated which i like but all of them are japenese... In asura there are quite a few people and alot english but they are assholes. Does any one know a very populated server not bahumet, that is nice and mostly english?

Were you planning to play with everyone at the same time or something!?  Amount of players fluctuate depending on the time of day too!  There are 3 major peak times for JP, US and EU that you should check as well.

I recently tried the 14 day trial, I met with a online friend who plays on the sereph server and I bet there was only 50 ppl online the whole server at most for 2 weeks while I was there....the servers should all be amalgamated into 5-7 servers so everyone has someone to play with or atleast can ask for help when doing this like maat quest and other AF quests. And the 2 servers bahmut and the one your on has the highest population and are totaly full no new players can make characters on those servers and that sucks cause thats where all the players are it seems.

Just because you saw 50 players did not mean there are only 50 players.  Vana'diel is gigantic.  I'd say probably one of the largest MMO's out there outside of maybe EvE Online.  You come across more people when you get to Jeuno or better yet, Whitegate.  I've never ever ever seen under 1200 people on a server (outside of just coming back on from maintenance) and that includes big holidays.

*edit* btw the Maat quest is solo so noone can help you with that regardless of population.

I play on the lowest population server (Pandemonium) and there is always over 1200 online at any given time.

You realize everyone in EVERY server is in whitegate spamming shouts?

The population of your server is actually depend on the amount of people in whitegate. Not nation city.
