Anybody know? Are the statistics available anywhere?

It goes through fads. For example originally not many played disciple till they increased its soloability. Now there are lots of them around. I think Dread knights take first place as most popular and druids as least. After GU5 there might be a glut of casters like druids when they nerf melee and fix druid (or have they already done that). Sony's web site has search facilities to get total numbers and I think it distributes by server and level from memory too.

I don't see many rougues, rangers and monks.

There are lots of clerics, dread knights, bards, necros.

No, there is no statistics available. In the beginning of the game, you could query the official site for information, but that is obviously no longer a very reliable source, as so many dead accounts are listed.

You can however do

/who all "class" 50 count

And the result is almost always that Cleric is most popular, followed by Shaman, Bard, Ranger, followed by Sorcerer and Necromancer.

Then comes the middle group which consists of Druid, Blood Mage, Monk, Psionicist, Disciple, typically in that order, Monks are climbing, though.

Somewhere in this group, usually more at the bottom, the tanks appear. Dread Knight is most popular, but Paladin and Warrior are usually directly behind.

And finally, by far the most unpopular class, typically with a good distance to the rest: Rogue. Monk was there before, too, but since they have become ultra useful for raids, their popularity has raised a lot.

And all this makes quite some sense - at least, mostly.

Clerics and Shamans are easy to play healers with good buffs.

Bards give insane dps increase to groups, every group wants one.

Rangers are good solists and not too bad in groups.

Sorcerers ... no idea why they are that popular, really. Soloplay isnt that great and groupplay isnt that great either.

Necromancers are the king of soloplay and unavoidable for raids thanks to their meat buff.

Druid are good solists and have good utility for groups, esp they can provide healing.

Blood Mage is a great class - the dps healer - but they are rather icky to solo and they are quite complicated to play.

Monks have become very popular because of their Fake Death. They are also a very high dps class right now, only beaten by Rogue.

Psi is a very special class... probably the least dps of all mages, but great CC.

Disciple is a great solist class, but the most unpopular healer choice for groups (even if a Fake Death healer is a great thing to have, but they totally lack buffs), and they are awfully complicated.

Dread Knight is a great solist and a great group tank with nice features such as Invis and Shadowstep.

Paladin is also a decent solist, maybe in some areas better than DK even, but they dont have that good dps alone.

Warrior sucks solo, and they where not better than other tanks for a long time in group. Thanks to their newfound dps and group dps, this has changed a bit.

Rogue ... sucks. Best dps of all classes, but otherwise cant stand a beating and needs a group for using some of his dps skills.

Which mage class is best for 1v1 pvp? Do they all have an invisibility spell?

Vanguard is a PvE game.

There is one PvP server, but it sucks in every respect. Empty, infested by goldbuyers, and PvP balance isnt exactly better than in other games.

I know of no relevant differences between the mage classes in PvP, but I would guess Sorcerer and Druids are better, because of their higher direct and immediate dps. Druids can also heal for insane values (quite close to what a healer can heal), so I guess they are in the advantage. Necromancer summon reportedly deals some good damage in PvP, too, though.

Only Sorcerer and Psionicist get Invisibility. Druids now gets a 3 min invis on self only, with a 5 min recast.

personally i have only ever seen 1 Psionicist and it was in a major city.  as for rogues, dunno if it was just me but i ended up with 1-2 rogues in every group i had.  druids were a tad rare but luckily my friend was a druid (and always happy to group).  classes that i never grouped with were Blood mage and Psionicist.

If I would just go for what I grouped with ... for example, I myself havent grouped with Shaman and Necromancers very often. In fact, I was repeatedly wondering why nobody plays Shaman. But they are obviously there, as the numbers tell you. They are actually not far behind to Clerics.

Same for Druids... now they are quite popular.

Just do a "/who all class 50 count" for every of the 15 classes, preferably when its prime time.

It will tell you whats there on your server.

My server is btw Halgar (EU).

Out of curiousity, how many players do you think there are on Seradon at low, normal, and peak hours? I really want to make a PvP character, but I have heard at peak hours there is often under 100 players on Sartok.
